Paleo Chicken Soup (Gluten Free and Grain Free)
I love chicken soup.
There’s something about a big steaming bowl of this stuff that gives me the warm fuzzies. Tell me I’m not alone here.
While I love chicken soup in general, let’s face it, some chicken soups are loaded with a whole lot of junk that is not healthy. And here at Sunny Fit Life, I’m all about converting my favorite (sometimes not-to-healthy) traditional recipes into healthy versions that fill me up without filling me out!
Benefits of Chicken Soup
This Paleo Chicken Soup is grain free, gluten free, delicious, and packed with protein and veggies. I’m pretty sure you will turn into a super hero after eating it, but results may vary.
We all know that chicken soup helps us to fight colds and feel better when we are under the weather. While the ingredients found in this Paleo Chicken Soup recipe all possess their own health benefits, chicken has been shown to:
- Be a rich source of protein that aids in muscle development and weight loss.
- Contain high levels of Vitamin B6 and Niacin.
- Be low in saturated fat.
- Contain selenium which aids in hormonal function and boosts immunity.

- 1 Whole Cut Up Chicken
- 1 Large Sweet Onion Finely Chopped
- 2 Ribs Celery Finely Chopped
- 2 Large Carrots Finely Chopped
- 1 Cup Chopped Frozen Green Bell Pepper
- 1 14.5 oz. Can Diced Tomatoes in Juice (do not discard juice)
- 4 Cloves garlic Chopped
- 2 32 oz. Low Sodium Natural Chicken Broth
- Salt and Pepper to taste
- Grain Free Pasta optional
- Place the whole cut up chicken, along with the next 6 ingredients in a very large soup pot. Add enough water to cover the chicken by at least 1 inch. Bring to a boil. Skim off and discard the foam from the top of the soup as it forms during the boiling process.
- Reduce the heat to medium-low, partially cover the pot with the lid, and simmer for about 2 hours. Carefully remove chicken and allow to cool as the remainder of the ingredients continues to simmer.
- Remove the chicken from the bones and place in a bowl. Tear chicken into bite-sized pieces.
- If you choose to add pasta to your soup, cook according to package directions.
- Add both cartons of low sodium chicken broth and chicken meat to the pot and simmer.
- Add salt and pepper to taste. Go easy on the salt shaker, though. Okay?
