I discovered spaghetti squash several years ago and quickly became aware of this yellow vegetable’s amazing ability to rescue me from my intense desire to ditch the grain-free and gluten-free lifestyle and give in to the never ending pasta bowl. I know that I sound a bit melodramatic, but we have all experienced those powerful cravings in which we need an accountability partner to “talk us down from the ledge” of temptation. I love spaghetti and soon learned that finding a grain-free, gluten-free, and paleo-friendly replacement for conventional spaghetti noodles is no easy task. Many of the alternatives found on supermarket shelves contain questionable ingredients that are not aligned with my grain-free and gluten-free lifestyle plan.
What Are the Benefits of Spaghetti Squash?
I often refer to spaghetti squash as one of God’s coolest inventions. Simply baking a spaghetti squash for about an hour produces tasty and healthy “noodles” which are the perfect gluten-free, grain-free, and paleo-friendly alternative to conventional spaghetti noodles. In addition, there are only about 40 calories in a cup of spaghetti squash. This means that you can fill up on this gluten-free goodness without the guilt! And the truth is that no one ever got fat eating too many vegetables!

- Is high in fiber which aids in helping you feel full and satisfied after a meal.

Baking spaghetti squash is very simple. Follow the recipe below to make your very own bowl of veggie goodness. You can use the amazing spaghetti squash to create lots of tasty and healthy recipes. Serving spaghetti squash with my homemade meaty red sauce is my favorite way to eat this tasty vegetable. You can also sauté some chopped onions and garlic in butter and toss the spaghetti squash in the mixture. As you can imagine, the possibilities for cooking with spaghetti squash are endless!

How to Cook Spaghetti Squash
- 1 Medium Spaghetti Squash
- Preheat oven to 375 degrees F.
- Place squash in a baking dish.
- Carefully pierce the squash on all sides several times.
- Place the squash in the preheated oven and bake for approx. 1 hour.
- Cut cooled squash in half lengthwise and remove seeds from the center.
- Using a fork, scrape the "noodles" from the squash and serve.
