Paleo Beef and Broccoli
I used to find the task of cooking to be incredibly frustrating. Well, maybe not the cooking itself, but trying to decide what to cook had the potential to trigger a mild panic attack. So began my quest to uncover and create healthy recipes that I could throw together on busy weeknights. Now that I’ve compiled a collection of quick and easy Paleo-friendly and gluten-free recipes, I’ve found that the task of cooking has actually become quite enjoyable. Week after week, I tend to call upon a handful of faithful recipes that are grain free, gluten free, healthy, easy, paleo friendly and take less than 30 minutes to prepare. We are all busy and most of us don’t have time to be slaving away in the kitchen for hours.
That’s where this Paleo Beef and Broccoli recipe comes in. It’s one of my favorite go-to recipes due to the fact that it rates high on my this-tastes-amazing-and-it’s-good-for-me-too scale. My Paleo Beef and Broccoli recipe is grain free, gluten free, soy free, dairy free, and a cinch to prepare. The coconut aminos are a great alternative to conventional soy sauce as they provide a similar taste, but without the gluten and grain that so many of us are trying to avoid. A quick rough chop of a couple of veggies, thrown together with some beef strips and seasonings, produces a convenient and healthy meal that’s perfect for busy weeknights. Enjoy!
- 2 Tbsp Butter (Grass Fed is Best)
- ½ Medium Sweet Onion, Roughly Chopped
- 1 Tsp Garlic, Minced
- 1 Head Broccoli, Chopped
- 1 lb Top Round Beef Strips
- ½ C Sliced Mushrooms
- 1 Tbsp Tapioca Flour or Arrowroot Powder
- 2 Tbsp Apple Cider Vinegar
- 2 Tbsp Honey
- 3 Tbsp Coconut Aminos
- ½ Tsp Pepper
- 1 Tsp Pink Himalayan Salt
- Heat butter in a medium frying pan or skillet.
- Salt and pepper meat.
- Add chopped onion and minced garlic to the heated pan and cook over medium heat until onions become translucent.
- Add broccoli to the pan and cover with a lid. Allow the broccoli to cook for approx. 2-4 minutes.
- Stir the veggie mixture and add the meat and mushrooms to the pan. Cook until the meat is browned and stir frequently.
- Meanwhile, combine the tapioca flour (or arrowroot powder), apple cider vinegar, honey, coconut aminos, pepper, and pink salt in a small bowl and stir until well combined.
- Pour the liquid mixture over the meat and veggies and stir well.
- Serve immediately.
