I’ve tested this recipe with several brands, and the only one that worked for me is the Natural Value Brand. Other brands that I tried turned out runny or clumpy–and nobody wants that! - 1 14 oz. Can of Full Fat Coconut Milk
- 2-3 Tablespoons Granulated Stevia or Honey
- 1 Tablespoon Clear Vanilla Extract
- Place the can of coconut milk upside down in the refrigerator and allow to chill overnight.
- Slowly and carefully flip the can over (right side up) and remove the lid.
- Carefully scoop out the cream and place it in a chilled bowl. Save the remaining liquid and use it to make smoothies, etc.
- Beat the cream with an electric mixer until light and fluffy for approx. 2 - 5 minutes.
- Add your sweetener of choice (stevia or honey) and whip for another 1-2 minutes or until well incorporated.
- Serve immediately on top of your favorite dessert.
