Baked chicken is one of my favorite dishes. There’s a restaurant not too far from where I live that makes the best baked chicken. It’s full of flavor and goes perfectly with fresh seasonal veggies.
This tasty grain free and gluten free baked chicken recipe is perfect for busy weeknights as you can throw it together, pop it in the oven, and do a few things around the house while it bakes up.
You know, like browse Pinterest or crush candy. Important stuff.
Best of all, it’s Paleo-friendly, packed with protein, AND full of flavor.
While you can use dried dill weed for this recipe, I prefer fresh. And yes, you can use regular table salt or sea salt, but Pink Himalayan Salt is loaded with minerals packs a powerful nutritional punch. Click here to view my favorite brand of pink Himalayan salt.

- 3 Tbsp Fresh Finely Chopped Dill
- 1 Tbsp Pink Himalayan Salt
- 1 Tsp Black Pepper
- 1 Clove of Garlic, Finely Chopped
- ½ C Light Olive Oil
- Approx. 1.5 lbs Chicken Leg Quarters (about 5 quarters)
- Preheat oven to 425 degrees F.
- Line a baking sheet with foil and grease well.
- Mix together first 5 ingredients in a medium bowl.
- Place chicken on baking sheet and, without removing the skin, carefully pull skin away from the meat.
- Rub approx. 1 tbsp of mixture on the meat under the skin.
- Rub remaining mixture on the top of each quarter.
- Place in hot oven and bake for approx. 40-50 minutes, or until juices run clear.
- Enjoy!
